Pieza audiovisual sobre un proceso de fermentación a partir de materia vegetal encontrada durante los recorridos urbanos en el taller ABECEDARIO – CIUTAT VELLA.
En los Jardins Sant Pau del Camp, una persona que nos mostró el lugar me regaló una Flor de Cardo seca de una parcela semi-abandonada, que al principio pensamos que era una Alcachofa. Empecé a investigar cómo transformar esa flor seca, pensando en hacer cuajada y usarla para hacer queso vegano. Finalmente hice una infusión, alimenté mi Kombucha con esa infusión e introduje la flor sin semillas en ella, fermentando la mezcla juntos durante aproximadamente una semana. Con el líquido resultante fermenté un queso vegano de almendra con sabor a cardo, escribí el siguiente texto para ser realizado mientras mostraba las transformaciones de la Flor de Cardo, y comimos y bebimos los fermentos junto con los participantes del taller durante la última sesión.

In Jardins Sant Pau del Camp, a person who showed us the place gave me as a present a dry Cardoon Flower from an semi-abandoned parcel, which at first we though was an Artichoke. I started to research about how to transform that dry flower, thinking about making curd and using it for vegan cheese making. I finally made an infusion, fed my Kombucha with that infusion and introduced the flower without seeds in it, fermenting the mixture together for around a week. With the resultant liquid I fermented an almond vegan cheese with had a cardoon flavour, wrote the following text to be performed while showing the transformations of the Cardoon Flower, and we ate and drank the vegan cheese and the Cardoon infused Kombucha together.
